Prairie Baking Company

Prairie Baking Co. is a cake and pastry bakery in Portland, servicing southern and coastal Maine, specializing in buttercream cakes decorated with fresh florals. I aim to showcase the natural flavors, colors, and textures of all the seasonal produce we have available to us here in southern Maine. I make delicious tiered cakes decorated with fresh flowers for weddings and special events as well as everyday celebration cakes and pastries.

With a combination of inspiration from european pastry and comforting American standbys, each cake, cookie, and pastry is made with care and with my customers in mind. I hand make all of my cakes and pastries, including my swiss meringue buttercream and cake fillings using cage free eggs, king arthur flour, local butter, real vanilla, and local produce. I firmly believe that wedding cakes should taste amazing as well as look amazing. We are located at 44 Romasco Lane, Portland, ME.

I recieved my B.A. in Studio Art from Loyola University Chicago in 2007, then I attended Kendall College in Chicago for baking and pastry. Since then, I have honed my craft in both bakery and restaurant kitchens as a baker, a decorator, and a pastry chef.

After interning at Mindy’s Hot Chocolate, my first baking job was in 2011, at Bittersweet Pastry Shop in Chicago, Illinois, as a cake builder. There I learned the art of perfectly smooth coating a cake in buttercream and meticulously decorating cookies with royal icing.

When my husband and I moved to Ann Arbor, Michigan, I split my time between working as a pastry baker at Zingerman’s Bakehouse and as a cake decorator at Sweet Heather Anne, a small custom cake studio.

From there, we moved to Cleveland, Ohio, where I mostly worked in restaurants (Trentina, The Greenhouse Tavern, and The Black Pig) as a pastry chef. There, I learned to communicate my sense of flavor and my commitment to local and seasonal ingredients through baking.

Now we live in Portland, Maine, I honestly couldn’t have dreamed up a better city and community in which to start a business. Thank you for your support!
